{"id":392,"date":"2010-02-23T20:41:06","date_gmt":"2010-02-24T02:41:06","guid":{"rendered":"http:\/\/www.csafarmdurhamkawartha.com\/?p=392"},"modified":"2010-02-23T20:41:06","modified_gmt":"2010-02-24T02:41:06","slug":"beet-chard-ragout","status":"publish","type":"post","link":"https:\/\/www.csafarmdurhamkawartha.com\/?p=392","title":{"rendered":"BEET &#038; CHARD RAGOUT"},"content":{"rendered":"<ul>\n<li>4 lbs (2kg) beets, stems removed<\/li>\n<li>\u00bc cup (50ml) balsamic vinegar<\/li>\n<li>Salt and freshly ground pepper<\/li>\n<li>\u00bc cup of olive oil<\/li>\n<li>2 tsp (10ml) chopped garlic<\/li>\n<li>2 large bunches chard, stems and thick centre rib removed, sliced into ribbons<\/li>\n<li>2 cups crumbled feta or goats cheese<\/li>\n<\/ul>\n<ol>\n<li>Preheat oven to 400F (200C)<\/li>\n<li>Place beets in a baking dish with about \u00bd cup (125ml) water. Cover with foil and bake for 45 minutes to 1 hour. Or until beets are tender. Let sit until cool enough to handle.<\/li>\n<li>Peel beets cutting them in half or quarters, if needed. Toss with balsamic vinegar season with salt and pepper. Reserve.<\/li>\n<li>Heat oil in a large skillet over medium to high heat. Add garlic and chard and saut\u00e9 together until chard is wilted, about 5 to 7 minutes.
