{"id":398,"date":"2010-02-18T05:31:36","date_gmt":"2010-02-18T11:31:36","guid":{"rendered":"http:\/\/www.csafarmdurhamkawartha.com\/?p=398"},"modified":"2010-02-18T05:31:36","modified_gmt":"2010-02-18T11:31:36","slug":"sausage-stuffing","status":"publish","type":"post","link":"https:\/\/www.csafarmdurhamkawartha.com\/?p=398","title":{"rendered":"SAUSAGE STUFFING"},"content":{"rendered":"<ul>\n<li>2 tbsp (25ml) vegetable oil<\/li>\n<li>1 cup (250ml) chopped onion<\/li>\n<li>1 cup (250ml) chopped fennel<\/li>\n<li>1 tsp (5ml) chopped garlic<\/li>\n<li>8 oz (250g) sausage meat removed from casing, crumbled<\/li>\n<li>2 cups (500ml) baby spinach<\/li>\n<li>2 tbsp (25ml) chopped fresh sage<\/li>\n<li>1 tbsp (15ml) chopped fresh rosemary<\/li>\n<li>2 cups (500ml) fresh bread crumbs<\/li>\n<li>\u00bd cup (125ml) grated apple<\/li>\n<li>1 egg<\/li>\n<li>\u00bc cup(50ml)\u00a0 apple cider or juice<\/li>\n<li>Salt and freshly ground pepper<\/li>\n<\/ul>\n<ol>\n<li>Heat oil in a skillet over medium heat. Add onions and fennel and saut\u00e9 for 2 minutes or until beginning to soften. Add garlic, then crumble in sausage meat and saut\u00e9 for 1 minute or until meat loses its pinkness. Stir in spinach, sage and rosemary and cook for 1 minute or until wilted. Stir in bread crumbs and apple. Let cool slightly, then stir in egg and moisten with juice or apple cider.
