{"id":418,"date":"2010-02-17T12:34:10","date_gmt":"2010-02-17T18:34:10","guid":{"rendered":"http:\/\/www.csafarmdurhamkawartha.com\/?p=418"},"modified":"2010-02-17T12:34:10","modified_gmt":"2010-02-17T18:34:10","slug":"cucumber-salsa","status":"publish","type":"post","link":"https:\/\/www.csafarmdurhamkawartha.com\/?p=418","title":{"rendered":"CUCUMBER SALSA"},"content":{"rendered":"<p>Prep Time: 10 min.<\/p>\n<p>Makes 3 cups (750ml)<\/p>\n<ul>\n<li>\u00bd field or English cucumber<\/li>\n<li>1 roasted red pepper or \u00bd red pepper, chopped<\/li>\n<li>\u00bc small red onion<\/li>\n<li>1 cup (250ml) cherry tomatoes, preferably multicoloured<\/li>\n<li>2 tbsp (30ml) red-wine vinegar<\/li>\n<li>1 tbsp (15ml) olive oil<\/li>\n<li>2 garlic cloves, minced<\/li>\n<li>1 tsp (5ml) dried oregano leaves<\/li>\n<li>\u00bd tsp (2ml) each granulated sugar and salt<\/li>\n<li>\u00bc cup (50ml) chopped cilantro<\/li>\n<\/ul>\n<ol>\n<li>Peel cucumber only if skin is thick. Slice in half lengthwise. Using a spoon, scrap out and discard seeds. Chop cucumbers, pepper and onion and place in a large bowl. Slice tomatoes in half and add.<\/li>\n<li>In a small bowl, whisk vinegar with oil, garlic, oregano, sugar and salt. Stir in cucumber mixture to coat. Sprinkle with cilantro.
