Rice with Leeks & Bacon

Leeks Recipes
  • 1lb bacon, chopped
  • 1 Tbsp oil
  • 2-3 Leeks (Chopped & thoroughly cleaned)
  • 2 Cups brown rice (cooked)
  • 2 Tbsp tomato paste
  • ¼ Tsp dried oregano
  • ½ cup water or stock, salt & pepper to taste
  • Grated Parmesan cheese (optional)

Fry bacon in a large skillet until crisp. Remove bacon and stir fry leeks in 1 Tbsp. Bacon drippings plus oil until tender. Add rice, tomato paste, spices, and stock. Simmer 3 to 5 minutes stirring frequently until stock is absorbed. Stir in bacon, sprinkle with cheese and serve. Serves 4.
