Zuchini Spice Cake

Recipes Zucchini

(Delicious & nutritious. If you don’t tell them, they won’t know!)

2 c. flour

2 tsp. baking soda

1 tsp. baking powder

1/2 tsp. salt

1 tbsp. cinnamon

1/4 tsp. allspice, if desired

1 c. walnuts

2 medium zuchini (2 c. grated)

3 eggs

2 c. sugar (or 1 & 1/2 c. brown sugar packed)

1 c. oil

2 tsp. vanilla

1 c. raisins

STEEL KNIFE: Process dry ingredients about 10 seconds to blend. Empty into a large mixing bowl. Process nuts until chopped, about  6 sec. Empty into small bowl.

GRATER: Grate unpeeled zuchini, using medium pressure. Empty into a measuring cup and measure loosely packed.

STEEL KNIFE: Process eggs with sugar for 1 min. Do note insert pusher into feed tube. While machine is running, add oil & vanilla through feed tube. Add zuchini and process about 8 to 10 seconds. Remove cover and add dry ingredients. Sprinkle nuts & raisins over batter. & mix.

Pour batter into greased & floured 9 x  13 inch pan. Or a 12 cup bundt pan. Bake at 350F for 55 to 60 min.or until fork comes out clean. Cool for 15 min. before removing from pan. Cake keeps well and freezes well.

YEILD: 12 to 15 servings.

VARIATION: Substitute 1 cup of chocolate chips for the raisins if desired.
